Easy Egg Drop Soup with Greens

For me, food is medicine, and the healing benefits of bone broth keep me sipping on it all season long. I’ve found that a great way to up my intake is to cook soups using the broth.

By taking bone broth, which is already a pretty perfect food, and combining it with spices, a protein, and greens, you create a nutrient-dense soup that stands on it’s own. Even better, with the anti-inflammatory benefits of the turmeric and ginger, this recipe will keep your immune system strong as we head into cold season. This meal heals from the inside out and makes for a great lunch, dinner, or, in my opinion, even breakfast!

Easy Egg Drop Soup with Greens

serves 2

Ingredients:

1 bottle Miso-free Chicken Bone Broth (2 cups)

2 eggs

1 cup greens of choice (spinach, chard, kale)

2 tbs Tamari (wheat-free soy sauce)

Juice from 1 lemon

½ tsp grated fresh ginger

½ tsp ground turmeric

Pinch of cayenne, optional

Directions:

  1. Combine the broth, grated ginger, ground turmeric, lemon, tamari, and cayenne (optional) in a pot and heat
  2. In a separate bowl, crack the eggs and beat with a fork
  3. When the broth is simmering, stir the broth in a circular motion and slowly pour in the eggs, continuing to stir for 1 minute, until eggs are cooked through
  4. Add in greens and stir until wilted
