Easy Carrot Ginger Soup & Grilled Steak Meal

Weeknight Meal Featuring Carrot, Ginger, Turmeric Soup
Soup is a sacred staple in my home. Yes, it is great for cleansing, however, I mostly enjoy soup as a centerpiece to meals. As someone who works a 9-to-6 job in advertising, juggles a busy life, and still values my sense of well-being and optimal health, it’s comforting to know that I can come home after a long day and have ready-to-go ingredients to create a quick and easy, balanced weeknight meal. This is one of my go-to dinners that doesn’t require any prep and is ready in no time!
All you need to recreate this meal is:
Soup: 2 bottles of Carrot, Ginger, Turmeric
Protein: 2 lbs of skirt steak marinated in 2 tbs tamari + 1 tbs chopped garlic
Greens: 1 bag of mixed greens + dressing of your choice (I like avocado oil, lemon and pink salt)
- Heat the soup and serve
- Dress the salad and serve
- Slice the skirt steak into strips and marinate in tamari and garlic (no need to do this in advance). Grill on a pan and serve
If you thought that cooking required long hours of meal-prep and time in the kitchen, I hope this helped debunk that myth. The truth is, prioritizing our health doesn’t have to come at the expense of our other priorities, and strategies, like this, help cooking and healthy eating fit right in with everything else.
It gives me peace of mind to know that, by stocking my fridge / freezer with these basic staples, I always have nourishing food available and accessible. This dinner comes together beautifully, it feels like home-cooking, but only you will know how easy it was to throw together.
